Yes. Signature cuts are dry-aged 28–45 days for concentrated flavor; select tender cuts are wet-aged for a supple texture.

What temperatures do you cook to?

We calibrate nightly and cook to your preference. Our recommendation is medium-rare for peak tenderness, but we’ll hit your exact temp.
